Here is really EASY way to install iPhone Apps for iPoT firmware 1.1.1 or 1.1.2 W/O computer
    (almost a noob guide)
    Using WiFi and Installer.app

    1. Go into Installer.app > Go to Sources tab
    2. Click Edit in top right corner> Click Add in top left corner
    3. Enter "http://repo.us.to" Then Hit OK.
    4. Click Done then Refresh
    5. Go into "Install" tab
    6. Scroll down a bit, then you'll see "iPhone 1.1.1 Apps for..." and "iPhone 1.1.2 Apps for..."
    7. Click the one you want to install
    8. If installing "Mail" or "Map" You must first install "Google Maps Prep..." or "Mobile Mail Prep.." respectively. NOTE: Will Say Warning, just click Yes.

NOTE: if repo shows up with nothing use alternative source: "applerepo.a.la" or "APPLEREPO.COM"

    Hope this helps. Peace

I was able to use the other guide just fine for everything else though...

So folks if your having an issue with mail not working on your ipod - try this method. It worked for me
