    /var/stash/Themes.xxxxx/THEMENAME/Icons

    Name them Palringo.png and BeejiveIM.png

    /Library/Themes is a symlink to /var/stash/Themes

even though it's a bit off topic:
Does anyone know why beejive already has emoticons attached=?! But why aren't they activated??

I figured that out because you asked where it is located.

    It is here:
    /var/mobile/Applications/{GUID}/BeejiveIM.app

Yes and inside this folder I found emoticons many many of them^^
To find out the {GUID} of your beejive app (and if youve got many other apps so try and error is a too big effort) for browsing it in MobileFinder(dont forget to disable applicationlaunch in settings) open up a terminal on your ipod.

    There type
    "find / -iname BeejiveIM.app"
    And press return (without quotes)
It should shoe you the exact path (that's also how I found the location)
