I was just wondering if this was even remotely possible.

So for whatever reason this is the fourth time the headphone jack on my jailbroken ipod touch 2nd gen has come loose. Each time apple has been very helpful and replaced my ipod with a new one, but each time i obviously have to restore my ipod and i lose all my jailbroken data, having to do everything over again on my new one. So my question is, can i go into my current ipod touch through ssh, copy EVERYTHING to my computer, and then when i get my new ipod jailbreak it and ssh in and copy EVERYTHING back.

Am i nuts? Or could this possibly work?

I'm 80% sure you can but only themes i think, cuz the apps have to be
    installed .

It's remotely possible, but you would have to make sure that you copy every single file, else you would be missing certain things.
