I'm new to the iPod Touch community and the jailbreaking community... but my guess is just to use the latest "RC". However, since you've got an iPT3, you'll need to use RC3 anyway.

You won't have to restore it, just connect it, close all iTunes processes (via Ctrl+Alt+Del) and use Blackra1n.

It'll be a tethered jailbreak, so do NOT turn it fully off, just use standby. If you do turn it off, you'll have to re-blackra1n to use your iPod again.

I heard it's better if you restore first, but you don't have to (I didn't). And, if you download from the blackra1n site, then you're gonna get the latest one, which is RC3.
