Go to google and search for something like "iPod touch 2G 2.2.1 firmware download", download the 2.2.1 firmware. Now go into itunes, hold the shift button and hit restore, a menu will pop-up, navigate to where you downloaded the firmware. Your ipod will now be restoring

and if even a DFU restore wont work, take it a step further. Put it in DFU, and do the jailbreak process all the way up till the ipod screen turns white. Then plug and unplug, and shift+restore

Try to press power + home button until u see apple logo... I also face the same problem as yours. My PC doesn't recognize my ipod. It's not ipod or itunes problem, it's ur USB port. To try, plug ur USB Drive to the port. U'll see that ur PC can't detect the drive.
To solve, reboot ur PC. Then, plug ur ipod (make sure ur ipod turn on & ur PC detect the ipod). Start jailbreak process again.
