... are these any harder to jailbreak and if so what do you have to do differently?
its no different than a 8 gb or 16 gb. all the apps are the same and everything, if you buy a new ipod though it will have upgraded firmware so you will have to downgrade to 1.1.1 then jailbreak and upgrade. but it is no harder than buying a 8 gb. Please Register or Log in to view images

If you are fine with one thats already opened but in perfect condition, feel free to check out the marketplace. I ordered mine from Apple, reconsidered thinking its really not worth all the money that could be spent elsewhere, but am too lazy to ship back to Apple store and wait for long processing time. It's on ebay. Cheers.
In regards to your question it is "harder" to jaibreak the 32GB because there really arn't any surefire methods for it such as for example Ziphone, because the 32GB is equipped with 2 flash chips so the filesystem is slightly different. However restoring to an earlier firmware version does work however keep in mind you lose the january appack, though you can get them back through jailbreak.
With a 32GB, you cant use ZiPhone (Right? No updates?)
Its a little more work, downgrading and using soft upgrades.
The 32gb is in the same boat as the 16gb.
