I'm going to do the jailbreak with redsnow tonight when I get home (from seeing the tall ships). I just wanted to know if I should take any steps before ,to avoid briking my phone, other than backing up everything. Or should I just do it and then deal with any problems that may arise?

back it up first, restore it and DO NOT DO ANYTHING IN ITUNES WHEN ITS DONE RESTORING, just close it and run redsn0w (find the firmware and let it go), then open itunes and restore from backup and your all good.

"Bricking" is an overused term. Bricking means your phone is FUBAR, f***ed up beyond all repair. You can never really permanently damage your phone unless you physically open it up and tamper with the internal hardware. In all cases you can still DFU it and restore. DFU/Recovery will solve most problems.
