my iTunes is recognizing my ipod as "iPhone" and in capacity it says like 4.7gb taken up of "other". When i open music or videos on my iPodTouch it says there are no videos there and when i go to Settings.app>about>it says music 0, videos 0,. I tried using bosstool to "wipe out" all my music and videos but it doesnt work.

MY QUESTION IS: is there any way i can resolve this issue without BossTool and without restoring my ipod cuz that would really be a pain in the ass?

Did you try using the thing in Settings to delete all music/content?
Settings > General > Reset > Erase all content.

I think what happened was by doing the thing with the captiure app and summerboard, i corrupted all my songs and videos so iTunes is reading it as one big 4.05gb file and the only way to get rid of it would be to restore.

What files would i have to delete if i SSHed into my ipod?

This happened to me on my 16GB touch. The only way I found that worked to fix it is to restore it.

now the file's just 2.6 gb. maybe if i keep doing this it'll get smaller. it's worth a shot if i would just have to restore it in the end anyways i guess.
