I know there are threads of updating from 1.x to 2.x but when your upgrade from 2.1 to 2.2 once it come out is there a way to keep all of your jailbroken stuff? if there is a way how would I go about doing this? Like my jailbroken apps and theme etc...

No, you'll have to restore in order to upgrade.

Wait for announcement that 2.2 can be jb. Then simply upgrade with itunes. you will lose all your apps. Simply re-jb and d/l apps again. You can backup your ipod files to your pc, but I dont think it backs up apps.

that will save his "saved games" or levels I think. Wont save his apps.

If you just upgrade, you can relink your directories (the new ones are linked by Cydia's space script).
Just be sure to move your Cydia applications to the new /Applications folder instead of relinking anything, since replacing the new folder with your old one would replace any improvements that 2.2 offers for user applications.

Oh, that really sucks that I'll lose everything... Hopefully there will be a way in the future to save your ipods state of applications and themes.

You don't have to, but you should. It is the safest way.
