Really easy guide I found on how to rename apps through SSH. This will change the name of the app that appears on the springboard.

First off, the things you need:
SSH Client(Winscp, ifunbox, iphone broswer, ect.)
    iDevice
    Some Knowledge of SSH

Next is to navigate to info.plist.strings
Open up your client and navigate to:
The folders will be named in random numbers and letters so you'll have to go through everyone to find your app. This might seem a tidious task but inside the random names are the app real name.

    Editing info.plist.strings
Once you've found info.plist.strings, make a copy on your computer and keep it as the original incase you mess up. Now make a 2nd copy and this one you'll be editing. Open the plist in Notebook on a computer or in ifile on the device. Now search for:
"rename here" should be the current app name, now delete what's after the = and write your new name.

    Finishing Touches
After you've done that SSH back into
private/var/mobile/Applications and then respring. Now your app should be renamed and your done! THis can be redone as many times as you want. Also in Cydia is a app called Rename and Rename II, these apps will go through the trouble of SSH and rename it for you right on the device.

You can use app links to show the real names of the apps, its much quicker if you have loads of apps.

Or you could use SBSettings and go to more, at the bottom it shows the location.
