I'd say its probably easier (and safer) just to "poof" them with SBSettings.
Yeah I seriously don't advocate people deleting applications off their iPod, so I've removed OP's post.
Use poof to hide the applications. It's a lot safer than deleting them.
Why would you even want to remove them, I don't see the point
I've hidden several of the standard Apple apps, stuff like Voice Memo's, stocks, calculator...things i never used. It cleans up my springboard and allows me to get all my apps organised into pages better.
Because i don't want a stocks app on my phone
Just poof it. Thats what i do.
