How can I remove the jailbreak? Is it just to restore in iTunes? I did that, and the programs disappeared, but does all the files get removed, or do I have to do something else?

Just a note - if you used BossTools to move your apps folder or fonts, you may want to pull them off your media partition. Same with any settings... a reset (not restore) should help with the settings.
