iOS 4.0 How to preserve all contacts, notes, messages & photos from 3GS 3.1.2-> 4.0?

    Basically, I don't want to do it through a computer sync, because the phone contacts are different to outlook contacts.
    I am really looking for the location of the files in the filesystem, so that I can copy them and transfer them back.
    I know where notes are (Mobile-Library-Notes), I know where pictures are (DCIM), but I am not sure where to go for contacts and messages.

    Oh yeh, and I don't want to do the backup and restore because of the issues that causes - which I observed first hand on my iPod Touch.

    If someone could point me in the right direction that would be awesome
