There are two ways to install Summerboard themes. I know it has been explained before but I've seen some people confused. Hopefully i can help.
Make sure to reboot your ipod after you install winterboard!!

    First way- SSH
(you must be jailbroken in 2.0 with SSH and winterboard installed and some sort of FTP client)
    1. Download the theme you wish to use.
    2. Open your FTP client
    3. Navigate to the root directory. (address bar should have one forward slash in it "/" )
    4. Click Library (address bar should say "/Library" )
    4. Click Themes (address bar should say "/Library/Themes" ) In this folder you should see saurik's nature theme. If not you didn't install Winterboard.
    5. Install your theme by making a folder and putting all the necessary files in it. (your icon images, dock images, wallpaper, ect.)

    Second way- Customize and Cydia
(you must be jailbroken in 2.0 with the new customize and winterboard installed)
    1. Open cydia and browse for a theme you'd like to have.
    2. Download the theme
3a. Go into the app winterboard and install the theme.
    b. Go into the app customize and import the theme
    1. After you import the SMB theme and open the theme browser in customize, you can choose what you would like to apply to the device (dock image, icons, wallpaper, etc.)

Hope this helped some of the confused users out there.

The most updated version of WTB doesn't change the dock image. Right now you have to manually change your dock through Customize.
