I just want notes like the iphone has. How can I get this on my ipod touch? I tried reading all the post but they all confuse me, I’m not all that great with computer.
Can someone please list what I need and how to do this? Remember in simple terms.

Even if all you need is Notes, you'd need to jailbreak the ipod anyway.

See the thread here for instruction on how to jailbreak (assuming you use Windows):
    http://www.touchdev.net/wiki/Windows_jailbreak

I used touchfree ("planetbeing's utility" on that page), so the steps were basically:
    1. navigate ipod's Safari to http://jailbreak.toc2rta.com , wait for Safari to crash (closes automatically)
    2. plug in computer, shut down itune
    3. run touchfree.exe, follow the instruction.
(Note that you will need to install .NET framework 3.0, I think)

Once it's jailbroken, you can download the iphone apps and put it on to your ipod's Applications folder (I use WinSCP).
See here http://youtube.com/watch?v=YciPeAPPrmE for step by step guide on how to sftp the programs into ipod & link to download the iphone apps.

Or, if you don't mind that it doesn't look as good, there is a program called "TextEdit" in the Installer (that will be on your ipod after it is jailbroken) that lets you write & save notes, and you don't need to SFTP into the ipod to install that.
