    Customize is dead, use Winterboard.

How do you edit text with winterborad? Winterborad is for toggling things on and off and layering this. Has nothing to do with text editing.

Alright, this isn't using SSH, but does need you to download a program on your computer. just download DiskAid, and have your ipod plugged in. At the very bottom left (in the program), make sure it says Root Folder. Then, go to library, and find themes. Make sure you have a theme downloaded that has custom STRINGS. At the top, there'll be an option saying Copy file to PC or something of the sorts, and just find the location of your choice for it to be copied to. After that, find the file, and in that theme, there should be a section called "Bundles". in bundles, go to com.apple.springboard. There will be some files saying things like Springboard, and just click it, open it up in notepad, and edit the text that says <string>Slide to unlock</string>
    <ke...
to whatever you want, save it as it was, and then copy file to /Library/Themes, go to winterboard, and TADA

I made my own application for this, I call it StringEditor (very original :]).
Although, I'm not sure about uploading it because it requires some chmod, ldid and special permissions to run.

It was written in Objective-C with the iPhone SDK.
