songs are stored in Media/iTunes_Control/Music (I think)
but they are set up where only iTunes knows what song is what, so unless someone makes an app to read the mp3 tags it will be very difficult to delete a specific song, and it will most likely mess up the musicplayer because the songs are listed in a .plist.

I am having the same stupid problem and it has nothing to do with being lazy. Apple should indeed have made it possible to delete songs right on my ipod (and afterwards being able to delete them in itunes at sync). I always throw a lot of songs on my ipod touch and only listen to them on my ipod and never use itunes to listen to music (that's why it's a portable device!!). And from the whole bunch of music there are only a few i would like to keep, the rest can be deleted. So as it is now, at the moment I am listening I have to remember or take a note each time I hear a song I wish to remove??? Or go through all the hussle of adding them to a on-the-go playlist to be able to remember them all. Most of the time I can't remember all the songs I want to remove and I have to take time to start itunes and go through all the selection again one at a time to see wether a song is good or bad. Why not let the user delete songs right away by left swiping on title??
