Your iPod needs to be jailbroken. There is an app available in Cydia called Categories, which puts your apps into folders.

If you are running Windows, and your iPod is NOT jailbroken click here.

If your iPod is jailbroken follow these steps:

    1. Open Cydia.
    2. Go into Sections.
    3. Go into All Packages.
    4. Go down into the C's of the list.
    5. Click on Categories
    6. Click on Install, which is located in the top right corner.
    7. Click on Confirm, which is also located in the top right corner.
    8. Wait for the package to download.
    9. Go back to your springboard.
    10. Open Categories.
    11. Click Add, which is located in the top right corner.
    12. Type in a name for that categorie.
    13. Pick an icon.
    14. Click on your categorie.
    15. Click Add which located in the top right corner.
    16. Now click on all the apps you want in your categorie.
    17. Click the home button.
    18. Wait for your springboard to restart.
    19. Voila, you now have a new categorie.

    Hope I helped.

I found 1 flaw in categories:
it's slow as hell, i ended up waiting like 20 secs just for the folder to open, or could it be that i have 104 apps?

    folders

if your ipod is not jail broken, and it is updated to the lates software, all you have to do is hold down an app (as if you were to move them arround or delete them) grab an app, and move it on top of another app (overlap them), it should make a folder automatically and ask you to name it. hope it works!
