I'm wondering how the App Store works, and how the device knows the App Store is what it says it is? If I were to connect my iPod touch through my computer via an adhoc wifi I could modify traffic that the ipod is sending, so can I divert the connections from App Store to Cydia for example?

Presumably this would be the first thing Apple would look to lock down, but how is it done? Apple's Public SSL installed in the ipod and then it will only communicate properly with an entity that has the private certificate (for example)?
