    I have 3 pages:

Page 1: Stock apps & Productivity apps (notes, calc, map, airsharing, etc)
Page 2: Entertainment (Pocket guitar, stanza, radio, colors)
Page 3: GAMES (from texas holdem to MGS)

before I did the jailbreak I had my pages as follows:

    default apps | games | games | games | toys | utilities | utilities | music

yes I have a ton of apps.

now I use categories folders - one for games, one for utilities, one for toys, one for music, and one I locked with lockdown called "private" and on my home page I got rid of stocks (with poof) and instead I have iHomework and cydia there. plus 2 blank icons to make it look better...

I've got one page, with 2 Folders, one for my Games/entertainment apps, and others for all of the other apps.
I only have 4 icons on the page, excluding the 5 down on my dock.
I don't like having a bunch of icons on my SpringBoard.

I see you guys use categories... personally i'm not too fond of Categories.. because it's UI in the folders seem so stiff.

I love having a bunch of apps on springboard... 5x5 colum rows and 5 dock. My friends like are "O______O omg need ipod touch NAO!" when they see my army of apps

in the order of oldest apps to newest apps. i reserve one page for the cydia apps (page 2)
for the stock apps, its organized in most convenient to least convenient. i leave the dock how it is from factory.

I have two pages of apps (thus far) and the arrangement is as follows:

Page 1 - all the pre-installed apps as well as Currencies (iTunes purchase)
Page 2 - the iTunes apps are all located here, from games to utilities and biz / productivity apps
Taskbar - consists of Calendar, Music, Todo, and iXpenseit
