I've did some searching and found no threads on this. I'm using a theme that has a light background and the font color of the icons is white making them a little hard to read. I wanted to know if it's possible using SSH to change the font color and/or the size.

Does anyone know which directory the springboard fonts are located in and how to modify them?

There is currently no known way to change the text color. I think your best bet would be to just hide the icon labels.

If you have photoshop, just put your own text below the icon and turn the normal text off in SMBPrefs.

No other way at the moment.
