Zink pretty much nailed it there, but if you need step by step, here it is:
    1. Download the 1.1.1 firmware from http://www.[PIRACY.mu].com/?d=V7H8X2QQ, and save to your desktop.
    2. Once that is done, start iTunes.
    3. Go to you ipod's tab on the left panel
    4. Hold shift and click on the restore button.
    5. This will open up a box. Select the 1.1.1 firmware from your desktop and press ok.
    6. Your ipod should start restoring.

If it stil restores to 1.1.2, or you don't understand this at all, go to this video:

    Hope this helps

Thank you! I'm downloading the firmware now.

The reason why I need to restore my iPod Touch is because I accidently installed the 'XLaunch' application and it has stuffed my iPod! I am not sure if I would be able to back up my applications before I restore the iPod so I wouldn't lose everything? Can I do this?

Can you still SSH to your iPod? If so, you should be able to copy everything.

When I press shift and restore and then find the 1.1.1 file there is an error that says:

The iPod "iPod" could not be restored. An unknown error occurred (5).

    Any ideas???

UPDATE; Just to clarify I get the error when the software installs it won't restore! PLEASE HELP
