I filled up all 11 possible home screen pages, and more, which I access through Spotlight. How do I deleted apps that are not visible through the home screen and can only be accessed through Spotlight (theoretical 12th page) without using iTunes.?

Temporarily poof some of your apps using SBSettings, delete the apps that are invisible. unpoof the ones you had previously poofed.

I used to have the 7x7 theme from cydia. It fits 49 apps on one page, but the icons are very small.
