if you have jailbroken your iPod, just download funambol from installer.

The callender and contacts seem to be backed up to itunes.

After I broke my ipod touch and got a new one when I connected it up Itunes it restored my contact and callender.

But if you want something more than that you could copy the "contact" and the "addressbook" folders from the root/library/

    Hmm, that's odd.
I have an iPod and I use funambol all the time.
However I don't think it supports calendar, but its great with contacts.
In not sure why it isn't working for you.
I remember when signing up for it, it asks about your phone carrier.
Just put whatever, then make sure your account info is on your funambol prog on your iPod.
