i don't think unchecking the sync applications removes the applications that are already on your ipod...

soo uhmm.. the reason i wanted this is cuz i have some problem with syncing apps, it would close n stop syncing when it starts syncing apps. So i want to make itunes not sync apps at all but sync everything else normally because I need to sync music, photos, movies and such.

Try checking sync only checked apps and check the ones that are already on your ipod.

When you plug in your device,go to the Applications tab and tick 'sync only checked apps' and choose only the ones on your device.
    Same as what dat33 said
