Open WinterBoard and put the following in this order...

    Transparent Icon Labels
    [VMP] Start Bar Dock
    [VMP] Windows Sidebar
    Vista Maximus Perfection

Let me know if that doesn't help. Also a screenshot would help

u can always get categories and some blank apps and put all your apps into different categories. then put the icons in this order
    X=blank app
    A=anything u want a shortcut too including a category

    A A X CLOCK
    A A X Calender
    A A or X X Weather
    A X X X

then put ur ipod and other apps on the dock

this is how i arranged mine, i dont have a screenshot bcause i had to restore and i lost everything but it looked realllyy nice.

this is how i did it and u dont have to do it my way, but everthing else looked to messy

    2G iPod touch
    make a 60x60 clear image
    put that image into private/var/stash/applications.xxxxxx/Categories.app/icons
(make sure you have categories downloaded from Cydia first)
Go to categories make a new category name it Spacer1
When it asks you to choose the icon, choose the blank square that you just put into your ipod.
When the new icon shows up it will be blank but it has words on it, to remove them go to private/var/stash/applications.xxxxxx and right clikc on Spacer1 click rename and rename it as *spacebar*, not the word spacebar but the button spacebar on your keyboard. Now restart you ipod and it will be an invisible icon! You can do this as manny times as you want just remeber to give it 2 space bar hits on the second one and 3 space bar hits on the third etc.
    Hope this helps!

I have Vista Perfection but I guess the one on Winterboard doesn't come with them and I can't find Categories on Cydia. Remember I'm using 2.1 and Winterboard.
    ------------------double post merged------------------
Also, I'm having a problem with organizing the icons.
I have it in the order like someone said above.
My Start icon is in the middle of the springboard and I can't drag it to the bottom. The mail app is the same and it can't be moved to the bottom.
I want it to look like all of the pictures with the sidebar and different folders and stuff.

Thanks for all of the help!!!

search on google for windows vista perfection and categories should be on cydia, search it in and u should find it, also when u download it online, it comes with some special icons so find some icons u want and ssh into ur ipod and go to the applications folder and find any app u want to change the icon for and click on it, then go to icon.png and rename it to icon.png.bak so u have a backup. then move the image u want to change the icon too into the app folder and rename it as icon and make sure it has a .png after it. that way, u can edit some icons u dont want

    1.) Open Cydia
2.) Go to Sections -> Repositories
    3.) Install Steffwiz
4.) Go to Sections - Blanks
    5.) Now install whatever package you need (1, 2, 3, 4, 5, 10, 20)

This is probably the easiest way to add blank apps

is there a way to do it by not adding blank apps?

I already tried doing it in the order

    1) Transparent Icon Labels
    2) [VMP] Star Bar Dock
    3) [VMP] Windows Sidebar
    4) Vista Maximus Perfection

All icons are jumbled and the icons that are supposed to be on the dock are nowhere to be seen *if i can when i get home ill post a screenshot*
