If a video can be watched and viewed on iTunes, does this mean that the same video will work with an iPod touch???

No, not all videos in iTunes or played in iTunes are playable on your iPod device.

Although, if you BOUGHT them from the iTunes Store, then they are playable on all supported devices.

iTunes can convert the videos into iPod format. I remember doing this to one of my music video but when i converted it with iTunes it was already mp4. At the start the mp4 would not work on my iPod so I converted it with iTunes.

Yep, iTunes will automatically convert the videos to mp4 if you sync the movies to your iPod
