I recently updated to 3.0 and then jailbreaked. I was able to set up one email account but I have no "mail" subsetting under settings. So I can neither add more email accounts or delete my current email account. I haven't been able to find anyone else having a similar problem.

    Any help would be appreciated

Try installing Extended Preferences from Cydia and turn it on. Might show up in Settings after this.
