iTunes won't recognize the iPod touch, you mean?

Try to place the iPod touch into DFU mode. You can push 'Place into DFU Mode' in iLiberty+ or do it manually. Click on 'The iPod touch Reference' in my signature and scroll down to 'How to place iPod touch into DFU Mode' for further instructions.

Don't worry, ZiPhone doesn't modify the bootloader like other methods such as WinPwn, so you're fine. You can't possibly brick an iPod touch with ZiPhone.
