Sameway you would enable multitasking except instead type Accessibility Instead of Multitasking

he's actually right. I just tried it and the Accessibility thing shows up.
Just one problem....There is just a little more that is needed
maybe a little edit in the General.plist will make it work

The 8GB is technically a 2G (which doesn't officially get the feature). There was a black on white theme available. Or you could try to edit some plists (I doubt it's a hardware issue).

I'm taking a look at this for you now.

I've managed to get "Accessibility" to show up in the Settings\General menu, but when I enter it I get a message saying "There was an error loading the preference bundle for Accessibility".

I'll keep looking and let you know.

EDIT: This won't work. The 2nd gen/8gb 3rd gen iPods are missing several files which are only on the newer devices. Simply copying them over won't work either, as the files would need to be modified to run on the 2nd gen's CPU structure. Sorry guys, looks like you're SOL on this one.

somehow u have to enable, "configure universal access" in iTunes
then i think u can check black-on-white in iTunes and u can enable it
