You can SSH in. Enter this in /Applications/Customize.app/Customize
Customize will open. Unhide your icons.

    I'm 95% sure this works.

Dont go to that directory. You need to SSH to your iPod. Get putty, and type that in as a command. That will allow you to execute it on your iPod. In the putty session connection settings make them as you would on the WinSCP. Once it says ur connected to the iPod you can run command on it. Type in what he said. That will force Customize to open up. When your done hit the home button, or on your PC hold ctrl and hit c (ctrl+c).

Sorry, didnt see that your brand new. These are all things we needed in the early days of jailbreaking. Putty is an SSH program. Yes SSH is basically a command line. Google search Putty, hit the first link, and download it. Now when you run it you should be abble to connect to your touch as you would with the FTP(WinSCP). You will need the IP , root , and password. But instead of moving files you will be executing commands.
/Applications/Customize.app/Customize is all you should have to enter. That is the basic run command for an app in the applications folder. You can run anything from there.
Ctrl+C is just another command that brings you back to the springboard.

He has no icons. It would be best to change the setting in the origional customize settings so it wont happen randomly.
