I was looking at getting some new headphoens for the Touch and I've heard good things about the Vibe Duo. I saw them in the Apple store but I didn't get them because I was unsure of how they worked. Supposedly they're made for the iPhone so they have a mic and music control buttons attached somewhere. Are these control buttons compatible with the touch?

Depends on what you want but I like the Shure E2Cs which are great for airplane flights since they isolate background noise. They are on sale at Amazon for around $50 USD. These are in-the-ear models and use foam sleeves much like foam ear plugs to create a seal in the ear canal. If this bothers you then you might take a look at the Audio Technica ATH-ANC7 which are over the ear noise cancelling headphones. They are also more expensive at $118.

For regular headphones I have always been a Senheiser fan and the regular Bose models aren't bad either.
