We've seen it with the iMac, iPod, and iPhone, and now other companies are taking advantage of it (iHome, iSkin, iPoint, iCarly). Has it gone to far?

Right, but that's not Apple taking it too far, it's other companies wanting a piece of Apple's success.

I should fix the thread, has the 'i' prefix itself gone to far. By any companies.

you forgot iPhone and no. the "i" prefix is almost like a product name. similar to what dell does with the "Dimension and insprion" series except there are like 30 of those computers and like 3 of the "i". other companies shouldn't be able to use it though

Dude, it's their trademark. It's what makes Apple, Apple.
