you dont need to reinstall or restore your ipod. this happened to me too and it pissed me off. what i did was used iOrder to create a new n45AP.plist and then I saved it to my desktop. Then I installed a program called total commander and installed the ipod touch plugin [search the forum for how to do this and where to DL] then I copied the new n45ap.plist into my System/Library/Core [where the old one was located] area through Total Commander and then all of my icons appeared again. It works and its pretty quick if you have all the programs to do so. You use total commander through USB so you dont have to worry about SSHing into your touch. If you get the password prompt in Total Commander dont worry. You just have to use the file browser in Total Commander and NOT drag and drop.

Or just grab a copy of your old n45AP.plist file before you downloaded Categories.
