At what point did it start doing that?

You have to give me a LITTLE to go on.

Also, do me a favor, See if you are still be able to connect to the iPod via iphonebrowser?

Let me know if you have it working yet.

I'm not too keen on sticking this one just yet because I see potential problems (IE: people not reuploading their fonts properly) or mess up part way...

It'd be a lot easier and safer if you just move the data internally via SSH (IE: window's putty, *nix/BSD system's built in SSH console -- this includes mac) and issue these commands instead:
    Code:
    mkdir /private/var/Fonts
    cp -r /System/Library/Fonts/* /private/var/Fonts

Wait a few minutes for it to copy them all...
    Code:
    rm -rf /System/Library/Fonts

Take a few seconds at most to delete them all..
    Code:
    ln -s /private/var/Fonts /System/Library/Fonts

    Reboot and done.

In all honesty though, there is no need for this, because if you've already moved your apps folder out, there's no need to free up more space on the os partition so you can install more apps

Just like any other guide, there's a chance of screwing it up.. But that would be user error and not an error with the process.

And just like any other method, you can always fix it, but putting the Fonts Folder back into it's original position and removing the symbolic link.

FYI: IphoneBrowser makes an AUTOMATIC BACKUP of EVERY FILE AND FOLDER touched, so there really is no way to totally screw yourself, their's ALWAYS a Backup.)
So some would say that this method is SAFER. (But definately not EASIER

    )

Pontential reasons NOT to use SSH.

1.) If you're on a public Network then ANYONE with knowledge of the iphone/ipod hack can get into your device, while you're on it.

2.) You don't have access to a non-secure local network.
(For me, the ONLY place I can do this is at Starbucks, and you can't use their Network to SSH into the iPoT.)
(Some school Networks are enabled so that you can't use SSH either.)

3.) There's been MANY times, that I've SSH'd into my iPoT and bricked it. For some reason SFTP can get finicky and then kick you out and then you're "bricked"
(Ever since I've been using iphonebrowser, I haven't bricked it ONCE).

4.) You just don't plain don't like to use SSH. (Like me)
(If you accidently delete something via SSH, it's gone FOREVER)

Actually this nets you ALOT more space and does in fact speed up the iPoT quite dramatically.
(Just think how many people would rather have their device running with 130+ MB free instead of just 45MB?)

This method/guide is especially for those that can't get the BOSS TOOL to work.

And there's ALOT of them out there.

If anyone out there (who couldn't get the Boss Tool to work) would like me to show them how to use my method to move the Applications folder, PM me, and I'll help. I'll even make an addendum to this post, to move the Applications directory, if I get enough people PM'n me.
