Jailbroken iPods are recognised by iTunes.

Did you try using a different USB port?

Also, not to treat you like an idiot or anything, but make sure the plug is in all the way..? the only reason I'm saying this is because I couldn't figure out for the life of me why my iPod wasn't being recognised by my computer about a week ago, and it turns out the cable was not inserted into the USB port all the way. xD

But yea, try using a different USB port/cable, or try restarting.

The version of iTunes you are using does not factor in to why iTunes is not recognizing the jailbroken iPod touch. I am currently running iTunes 7.6, and my iPod touch is recognized, same as it was in iTunes 7.5.

As far as fixing this problem, here's some suggestions:

    A) Restart your computer, and see if iTunes recognizes the iPod touch after restart.
    B) Reinstall iTunes.
    C) Check to see if the iPod touch is recognized on another computer.
    D) Place your iPod touch into restore mode, and then see if iTunes recognizes it in restore mode.

That's not necessarily true, he may simply have to reinstall iTunes.
