You have to download games that are compatible with game center.

I have games listed in the "Game Center" section of the app store that aren't showing up when I start game center. Any ideas? I don't want to delete than reinstall, because I don't want to lose my game progress.

Yeah. When you open a Game Center-compatible app, you'll then see them show up in the Game Center app. I don't know why you have to, but ya do.
