Some games do, like Simcity. Others don't.

It depends on how the developers chose to handle saving.

you can save your whole / directory via ssh. it takes forever and kills the battery quick so when i did it i turned down the brightness and kept it plugged in

personal files (non-jailbreak data) is saved in
you can use FTP or SSH to get the files down from there. the best is to use an *NIX like system like MAC OS X or Linux or BSD to do that. just because of the permissions problem: windows doesn't keep them so it WILL definetely be a mess to reconstruct them! (no, not all are "777" which means full access for each user/group - some files just won't work if everyone has access to them)
while any other *NIX-like system will keep the right permissions

to backup jailbreak-stuff is almost impossible - since jailbroken-apps have full access to the entire device you have to backup the "/" (root) with all its folders, files and subfolders...

I've done this once and it took me 5-6 hours (I mean the entire backup of "/") but this is because of music (I had 16gb on it^^) - so a suggestion: connect ipod/iphone to your pc/mac, delete all music and videos from it, then backup, restore after firmware upgrade/reinstall and then resync music/videos

    that should work out

    BUT:
I do NOT suggest you to use backup-method "/" because it is senseless and hopeless^^
if you restore then you'll brick your firmware (youre going to overwrite important library files with older versions = mess up guaranteed after reboot -.-)
I did it only for testing purposes and because I know a little more about what's important and what's not to do a working restore^^ (tooo much to explain at this place)

    greetings
