Well this is the step-by-step story:

    1. Installed the Ziphone and some apps
    2. Ran out of space (15MB on first partition)
    3. Seen this page > http://www.ifans.com/forums/showthread.php?t=19572
    4. Tried to install the Boss Tools package
    5. The installer hanged on "Downloading", but the iPod was working fine (home button worked)
    6. Came back to the installer, "Downloading"
    7. Hold the shutdown button
    8. The "Slide to shutdown" appeared, but BEHIND THE DOWNLOAD STATUSBAR!!, so I couldn't do anything!
    9. Thought about holding the two buttons together
    10. Look, it restarted! Problem solved!

    Now the trick part:

    1. iPod boots
    2. All the buttons appear on the main screen
    3. The message "Edit Home Screen" appears showing me that I can reorder everything
    4. Some few seconds later it happens again, and again, and again, it does not reboot, but keeps recreating the main screen
    5. Many 'agains' after, the screen freezes

    The downside:
iPod is not recognized by iTunes...

    The upside:
I can still log into the SSH server!!!

And I can't turn it off now, as the battery is inside and all I can do is do the "very cold restart".

Can I resolve this, or am I totally screwed?

I looked for resources about restoring iPod touch and found nothing helpful, and iTunes doesn't show the iPod anymore...

Pleas search for force restoring, do not say you looked for stuff on restoring your ipod and found nothing, because that is a lie. Use the search button and look up force restore.

You're right, I acted like a noob now (well, I'm really desperate).

If anybody finds this topic, this is the procedure:
    http://www.ifans.com/forums/showthread.php?t=2790
(had to use the advanced search and look only on titles)

    Final status: iPod restored!

Yes, thanks to the moderator's patience I've restored it and already reinstalled the Jailbreak, AND used the BossTool to move the applications out of the tiny partition, so no more problems for me... hehe
