Ok i used to have an iPod touch without the software upgrade, and i got them through jailbreaks. Recently that iPod got busted and I took it to Apple, they replaced it. So now I have a new touch, with the software upgrade on it. My question is, lets say I jailbreak it, and for some reason one day i have to restore it. When i restore it, will I still have my Mail/Maps/Notes/Stocks/Weather apps? thanks for the reply's

No. iTunes knows to return them to you when you restore your iPod from a backup of that one, which you need to have synced to your computer.
