It's not too difficult, good question. The latest jailbroken Firmware is 2.2.1.

    1. Open iTunes with your iPod plugged in

    2. Click on your iPod from the left menu in iTunes

    3. Click the "update" button on the "summary" tab

    4. Let iTunes update your iPod touch to the latest firmware (2.2.1). You may have to pay for this update if you have not already done so. Any firmware that is 2.0+ costs $9.95 for iPod touch users. This means that once you have paid for it, anything 2.x is free. So if 2.3 comes out there is no extra payment needed.

    5. Once your iPod touch is running Firmware 2.2.1, follow this: http://www.ifans.com/forums/showthread.php?t=115155 (NOTE: That is for jailbreaking Firmware 2.2, not 2.2.1. The only difference is that you'll want to download THIS instead of the link provided in that thread.)
