Do people really not do backups of their own stuff if they plan on Modifying the original?

It is the Intellectual Property of Apple. In other words, They created it, they Own it.

have you actually changed the original? or just extracted images and put them i a UIImages folder in winterboard?

thats the much easier and safer way of doing it, leave the original untouched just copy the images and put them in a theme. the beauty of that is you can also switch easily between different sets when you change the theme. ive got a blue set (keyboard etc) to go with badge blue and a black set to go with iPhone3g.
