If I exchange my defective iPod touch through the mail or at the store, what happens to the update that I bought? Do I have to buy it again? Also when I exchange it, will I get a refurbished iPod or a brand new iPod? The warranty began about 2 months ago so I still have plenty of time.

NO anything you purchase from itunes you can download multiple times on the same computer. Itunes will know you purchased it already so it will just update it.

If you bought the update through iTunes then you can e-download as many times as you want for free. You do not have to buy it again. I believe with the warranty you will get a new one if you send it to Apple through the mail. I have heard of a couple cases where when bringing it to the store they give out refurbished ones. Contact Apple and you can ask them about getting a new or refurbished one because I am not 100% sure about it.
