Could ubuntu work on ipod touch or iphone? Any releases like "Ubuntu Mini"?
The closest thing you will get to Ubuntu on your device is a theme.
At the moment, it isn't possible. At all. But hey, people said Android would never work. Yet here we are.
Could it... Yes, certainly... Does it work right now, not so much. I would assume if interest grew enough, it would though. I would love to see Ubuntu on an iPhone/iPod Touch.
Not impossible, at all, Ubuntu and other Linux based OS's, have very low system requirements, so, it would be very possible, if - as tinyman392 said - interest grew.
there is project, iX wicht does work on the ipod touch, but its in a early development state, so not much yet. (all there is now is a stripped down xfce desktop)
to use it on the ipod touch, you must use a ipod touch kernel from the idroid forums
but, naturally it wont be fully ipod compatible until a ipod specific release is made

Ubuntu is just Linux distribution and we already got Linux on Iphone, it's only matter of drivers, compiling and right configuration, problem is hardware that would not handle latest releses of Gnome or KDE, but maybe old one. Also screen size would make desktop UI unusable, so maybe people will try to do something on iPad.
First step first, people need to run X server (X.org for example)on iDevice, otherwise you can only dream about Linux desktop software]
Keep in mind that Linux software that works on console only already might work on Android builds

as i said before ubuntu for the iphone exists right now! its in development state though, there is a developer resealse available wich boots into ubuntu, but doesnt have much functionality but wifi, and touchscreen yet.
I hope you not misunderstanding Ubuntu with standard Linux software
