Is there any way at all to edit the Backup of your iPod that iTunes makes??? Heres the story that I have on why I want to do this:

When I jailbroke my 1G iPod touch I backed up my stuff through iTunes (Including my notes). I got a new iPod Touch 3G recently and then restored from my backup. All was good but the only problem is that I can't use my notes app. I type something, click done, and it doesn't save the note I write. I looked into this and came to the conclusion that this happened because I need to erase the notes.old file from the Notes.app directory on my iPod via SSH, but I don't want to jailbreak.

The best thing to do would be to get into the backup and replace it with another earlier version of the notes.app file which does indeed work. I have been patient not having a working notes app until now. I just need it now and cant go on.

I don't want to restore from another backup because then I'd lose all the presets I have. Is that the only option I have left to do in order to get my notes app to work right again? Thanks.

My iPod isn't jailbroken. I want to keep it clean this time around. If I could just find a way to replace the notes part of the iTunes backup with a different one, I'd be okay.

I've tried the program already. It doesn't show the actual system files, it only shows the picture folders and a downloaded programs backup folder.

is that a program too?? None of them work, they just show the same folders, not the actual system files.
