There's a thread about that here. But it complicated and might actually break your computer. I see if I can find the thread.

I just realized that your ipod is jailbroken (or at least that's what your profile says). Did you use cydia? If so do you remember seeing the following message in green lettering on the cydia home screen: This device has SHSHs on file for iPhone OS: 3.1.2, 3.1.3

If you did then you can downgrade to 3.1.3. Go here: http://theiphonewiki.com/wiki/index.php?title=Firmware#iPod_touch_.282nd_generation.29 select your ipod download the 3.1.3 firmware. Then go here: http://www.ihackintosh.com/2010/02/downgrade-iphone-3gs-os-3-1-3-to-3-1-2-with-cydia-shsh/ to change your host file. Then connect your ipod to itunes and hold the shift key while clicking on the restore button this will open a windows which allows you to browse to the location of the firmware you downloaded. Then select the old firmware.

Make sure that you uninstall wifisync if you have it installed before trying to restore.
