SSH is basically the command-line interface that you can use to issue commands to your iPoT. For example, if you have the "BSD Subsystem" installed on your iPoT, and use SSH to issue a "reboot" command, it will restart your iPoT. PuTTY is an SSH client used to connect to your iPoT.

iPoT is a four letter abbreviation for iPod Touch.

I'll get to the others in a minute.

SFTP is the protocol used to transfer files from your computer. It's like FTP, which stands for File Transfer Protocol, will an 'S' added. The 'S' stands for "Secure", which means that your files are protected while they're being transfered to your iPoT.
