This is not exactly a software idea, but here we go:

Wouldn't it be nice if one could plug a USB device into the iPod Touch?

    Think of the possibilities:
    - using an SD-card reader
    - plugging in your friends usb stick to copy some data
    - even plugging in an external harddrive
    - using a usb headset and do voip

    but most of all:
    - using a bluetooth usb dongle and connect via mobile phone to the internet while on the road

Any ideas if that is possible?

    iPod touch
Would all depend on the chip configuration and the pinouts...it supports USB host but i have no idea if its enabled or anything.

I could vouche for an external hd

IF it would be possible to use bluetooth on ipod touch though, an external bluetooth hard drive would rule

the ipod touch could be better than the ipone with bluetooth data transfers (you could connect it to almost everything)
