I'm on a contract and as long as your iPhone is already activated (ı.e. you can make calls) you should have no problems.

If you do a restore, is there ANY tell tale signs left over that Apple can find that can prove that the iPhone was once jailbroken?

    No.
Pwning hinges on a bug in the bootrom DFU mode to flash unsigned images to the NOR, which is reflashed with every restore.
The unsigned images will be erased and replaced with legitimate ones as soon as you restore to a stock firmware.
Also, any signs of jailbroken data on the NAND can be erased with a restore, and if you're really paranoid, can be destroyed with either shred (a GNU utility include in Core Utilities with Cydia) or by restoring a few more times.

if you want to unlock it in the future, don't upgrade to 2.2 (as the dev said)

You can upgrade to 2.2, just upgrade using a custom firmware.
This can be accomplised by using PwnageTool on a Mac or XPwn on Windows with the 2.2 bundle from PwangeTool.
