I would like to delete some proprietary apps, such as Stocks, Weather, Etc...

Any way to do this? SSH?

    I have a 16gb 2nd Gen Jailbroken

You can do it in SSH, but I would recommend against it. Just Poof! them.

I just deleted them by SSHing in and deleting the app I didn't want from the /Applications folder.

It's easier to just hide them with SBSettings or Poof!.
